hearty soup than can easily become vegetarian, just omit the chicken, and use veggie broth instead!

Recipe Ingredients for Enchilada soup

20 oz reduced sodium black beans
28 oz green enchilada sauce
14 oz Broth Chicken Reduced Sodium
3 cloves garlic, minced
8 oz brown rice
2 cups chicken
12 oz corn
1 tsp olive oil
1 small onion, diced
1 tsp black pepper

Recipe Directions for Enchilada soup

  1. Cut chicken into bite sized pieces. Heat oil in pot, add chicken, minced garlic, black pepper and onion. Cook until chicken is browned, but not fully cooked. Add beans, rice, corn and sauces. Bring to a boil, then simmer for 20-30 minutes.

  2. Garnish with baked tortilla strips, avacado and greek yogurt (or sour cream)
