Lo carb version of Chili's enchilada soup. Chicken is blended with the broth to thicken without the use of corn or other flour.

Recipe Ingredients for Enchilada Soup (lo-carb)

8 oz Enchilada Sauce
8 cup Soup, Chicken Broth
4 tsp Garlic Salt
2 cup, chopped or diced Chicken, Thigh, Meat Only
1 cup, chopped Peppers, Sweet, Red
2 tbsp Olive Oil
1 cup, shredded Monterey Cheese
1 cup Coriander Leaves

Recipe Directions for Enchilada Soup (lo-carb)

  1. In large pan, heat oil.

  2. When oil is hot, saute chopped red peppers. You can also add onions and garlic at this point.

  3. When peppers are soft, add enchilada sauce and 1 cup broth. Mix.

  4. Place the cilantro (coriander leaves) and a few pieces of the cooked chicken thigh in the blender. Pour the hot mixture of peppers, sauce, and broth into the blender.

  5. Blend until totally smooth.

  6. Return mixture to pan. Rinse blender with remaining broth and pour that into pan as well.

  7. Add remaining chicken and heat to desired temperature.

  8. Serve with shredded monterey jack cheese, sour cream, or cilantro for garnish.
