Enchilada Rice Recipe

Makes 6 servings



Yummy rice dish that can work either as a side dish or a main dish. I serve it with a small dollop of light sour cream and wedges of fresh bell pepper--"pepper scoopers" as we call them in my family! If I have it handy, I'll sometimes throw in some chopped up chicken as well.

Recipe Ingredients for Enchilada Rice

3 cups cooked brown rice
15 oz. canned corn
15 oz. canned black beans
15 oz. canned diced tomatoes
12 oz. enchilada sauce
3/4 cup shredded cheese

Recipe Directions for Enchilada Rice

  1. Mix all ingredients except for cheese.

  2. Pour into 2-quart baking dish sprayed with Pam.

  3. Bake at 350 degrees, covered, for 25 minutes.

  4. Remove cover, sprinkle with cheese, bake 10 minutes more.
