Enchilada less vegetarian chorizo

Recipe Ingredients for Enchilada

1 flour tortilla
1 cup fatfree refried beans
1/4 cup onions
1/2 cup enchilado sauce
1/2 cup mexican cheese
1 tbls olive oil

Recipe Directions for Enchilada

  1. Cook onions until tender and add to refried beans.

  2. Place about tbls of enchilado sauce on flour tortilla and then add refried beans, 1/2 the cheese.

  3. Roll tortilla, place in baking dish and cover with remaining enchilada sauce.

  4. Bake for about 15 min. at 350 degrees.

  5. Remove from oven, cover with remaining cheese and bake until melted.
