Our recipe for a quick low thought meal. Really healthy if you can avoid adding more cheese.

Recipe Ingredients for The Enchilada

15 oz. cooked black beans
6 corn tortillas
1 large onion, chopped
1 clove garlic, minced
15 oz. chopped tomatoes
1/2 cup chopped sweet pepper, chopped
1 tbs cumin seed
4 oz. cheese, monteray jack, shredded

Recipe Directions for The Enchilada

  1. Fry the onion, garlic and cumin seeds until transparent.

  2. Add can of beans and the can of tomatoes and simmer until liquid evaporates.

  3. Alternate layers of bean mixture with tortillas beginning and ending with beans. Sprinkle chees on top and bake about 15-20 minutes or until bubbling or cover and microwave about 3-5 minutes.
