Mexican-style lasagna; full of protein, calcium, and vitamins

Recipe Ingredients for Enchilada Lasagna

1/2 pound ground turkey breast
1 1/2 cup mexican blend cheese, reduced fat
1 cup tomatoes, canned diced drained
1 cup cottage cheese, low fat low sodium
1/4 cup jalapenos, canned diced
1/2 cup scallions, chopped
2 teaspoons chili powder
2 garlic cloves, crushed
9 corn tortillas, 6 inch
1 cup taco sauce

Recipe Directions for Enchilada Lasagna

  1. Brown the turkey in a nonstick skillet. Let it cool, then combine it in a bowl with the cheese (save 1/2 cup), tomatoes, cottage cheese, peppers, scallions, chili powder, and garlic, stirring well.

  2. Coat an 11x7 baking dish with cooking spray. Place three tortillas in the dish and top with half of the turkey mixture. Layer three more tortillas, then the remaining turkey mixture. Place the last three tortillas on top, pour taco sauce over them and sprinkle the remaining cheese.

  3. Bake at 375 degrees F for 20 minutes
