Cheesy Gooey Enchiladas, comfort food

Recipe Ingredients for Enchilada Cheese Bake

12 corn tortillas
12 ounces black beans
8 ounces enchilada sauce
1 can Cream of Mushroom Soup
1 can tomato soup
1/2 cup shredded mozzarella
1/2 cup shredded low fat cheese
1 pound ground turkey

Recipe Directions for Enchilada Cheese Bake

  1. Pre-heat oven to 350degrees

  2. In a pan, brown ground turkey till fully cooked. Add Refried Black beans and set aside.

  3. Combine enchilada sauce, tomato soup and cream of mushroom soup in a medium bowl.

  4. In a glass 11"x9"x2" pan, spread a spoonfull of sauce on the bottom.

  5. Fill each tortilla with a heaping spoonful of the bean and turkey mixture, roll up like a taco and place in pan side by side till all tortillas are filled.

  6. Pour entire bowl of sauce evenly over the top of the tortillas and sprinkle the cheese over the top.

  7. Bake for 30 minutes untill bubbly and cheese begins to turn golden.

  8. Enjoy with non-fat sour cream.
