1 small onion chopped
8 flour tortillas
1 cup reduced fat sour cream
1/2 cup reduced fat milk
14 1/2 oz. diced tomatoes
2 cups canned black beans
8 oz. lettuce
1 tsp. oregano
1 tsp. garlic salt
1 tsp. pepper
1 cup cheddar cheese, divided

Recipe Directions for Enchilada Casserole Recipe(2)

  1. Brown ground chicken and onion together, drain.

  2. Add sour cream, tomatoes, milk, black beans, oregano, salt, and pepper.

  3. Layer tortillas, ground chicken mixture, lettuce, and cheese.

  4. Bake at 375 degrees for 30 minutes.
