Use a large glass casserole pan. There was no Enchilada sauce in the database of foods but there is more to this in reality. Layers of enchilada sauce, corn tortillas, olives, beans, hot peppers, a little sour cream, cheese, and taco seasoning. Bakes at 425 for 25 minutes covered in tin foil or a upside down cookie sheet. You can also mix some simulated meat (or real meat) with the taco seasoning but let this sit over night, it makes the flavors soooo much better. GREAT leftovers.

10 oz Black Bean Enchilada Whole Meal
500 grams Cheese Cheddar Medium Light

Recipe Directions for Enchilada Casserole

  1. layer: Enchilada sauce

  2. A few corn tortillas

  3. olives

  4. beans

  5. taco seasoned meat substitue

  6. hot peppers

  7. enchilada sause

  8. Cheese

  9. Repeat, replacing taco seasoned meat with a few dollops of sour cream.

  10. Top with enchiladas sauce and cheese, bake.
