I use 4 Smart & Delicious Low Carb Whole Wheat Tortillas instead of 2 regular. The stats are about the same. When chopped onions, tomatoes and lettuce are put on top it adds enough carbs to make a good zone meal. 40/30/30

Recipe Ingredients for Enchilada Casserole

8 oz 93% ground turkey
16 oz fat free refried beans
284 grams frozen spinach
8 oz fat free cheddar
2 whole wheat tortillas
14 1/2 oz diced tomatoes
1 1/2 oz enchilada sauce

Recipe Directions for Enchilada Casserole

  1. Mix enchilada sauce mix with the can of diced tomatoes. I use no salt tomatoes.

  2. Dip Tortillas in sauce and place in bottom of casserole dish.

  3. Brown turkey and layer with beans and spinach.

  4. Top with the rest of the enchilada sauce and the put cheese on top.

  5. Bake at 325 for 30 min.

  6. Top with chopped onion, tomato and lettuce.

  7. Makes 6 servings
