Real comfort food; good served hot, warm or cold. Hearty and filling; feels like junk food, without a lot of the junk.

Recipe Ingredients for Enchilada Casserole

2 cups turkey (cooked and cubed)
8 flour tortillas
1 cup water
16 oz refried beans
10 oz salsa
10 oz cheddar cheese, shredded
1 cup mushrooms, sliced
1/2 cup onions, diced
1/2 cup green peppers, diced
1 oz taco seasoning
8 oz sour cream

Recipe Directions for Enchilada Casserole

  1. Cover wok in non-stick spray and heat over medium.

  2. Heat mushrooms and onions until mushrooms are soft and onions transparent. (You can add green pepper if you like.)

  3. Add dry taco seasoning, stir until all vegetables are covered.

  4. Add in cooked turkey and refried beans and mix well.

  5. Add 1 cup water and let simmer about 10-15 minutes, until mixture runs thick.

  6. Heat oven to 350 F.

  7. Spread 1/10 filling in bottom of 8-inch round baking dish.

  8. Cover with 1 tortilla.

  9. Spread 1/10 filling thinly over tortilla.

  10. Sprinkle with 1/8 cheese.

  11. Cover with 1 tortilla and repeat these steps until all tortillas, filling and cheese are done.

  12. Cover dish and back for 40-50 minutes.

  13. When done, remove from oven, uncover, and let sit for 10 minutes.

  14. Cut into 8 slices.

  15. Serve hot or cold with 1 oz sour cream on the side.
