Enchilada Casserole Recipe

Can be done in the microwave, but I prefer to bake it in the over for 30 minutes, 10 minutes uncovered.

Recipe Ingredients for Enchilada Casserole

2 cups chicken, cooked and cubed
1 cup of chicken broth
10 oz cream of chicken soup
1/2 cup green chiles, chopped
1/2 cup onion, chopped (or 2 T instant minced onion)
1 clove garlic, minced
8 corn tortillas, cut into strips
1 cup light sour cream
2 cups cheese, shredded (a mixture of jack and cheddar)
2 tablespoons salsa

Recipe Directions for Enchilada Casserole

  1. Combine chicken, broth, soup, green chiles, onion, and garlic in a glass bowl.

  2. Cover with plastic wrap, cook on high in microwave oven for 5 minutes, stirring once.

  3. Mix sour cream with salsa

  4. In a buttered 2 quart casserole, layer 1/2 of the tortillas, sour cream/ salsa, chicken mixture and 1/2 cup of the cheeses.

  5. Repeat layers, ending with a layer of tortillas spread with sour cream/salsa and the last layer of cheese.

  6. Cover tightly with plastic wrap.

  7. Microwave on high for 10 minutes, turning after 5 minutes.

  8. Sprinkle remaining cheese.

  9. Microwave another 2 minutes.

  10. Serve with a smile, and don't tell anyone how easy this was to prepare.
