Recipe Ingredients for Enchilada casserole

8 white corn tortillas
1 1/2 pounds lean beef, cooked
10 ounces mexican cheese
20 ounces enchilada sauce
16 ounces fat free chicken broth

Recipe Directions for Enchilada casserole

  1. Chop cooked beef into medium sized chunks.

  2. In a medium to large saucepan (I use a non-stick pan),mix enchilada ssauce with chicken broth. Add meat, bring to a boil.

  3. Reduce heat to low and simmer beef in sauce for about one hour (covered).

  4. In a dish large enough to lay 2 tortillas side by side, layer tortillas with enough sauce to cover the tortillas; cover that layer with 1/4 of the shredded cheese. Continue with the remaining ingredients.

  5. Bake at 350 F for 30 minutes.

  6. Let cooked casserole sit for about 10 minutes after removing from oven. Cut into 8 equal servings and enjoy!
