Recipe Ingredients for Enchilada Casserole

1 lb. ground beef
1 green pepper
8 oz. tomato sauce
30 oz. hominy
1/2 cup cheddar cheese
3 lb. mixed vegetables

Recipe Directions for Enchilada Casserole

  1. In large skillet or wok, brown the ground beef and green pepper. When meat is browned and cooked through, pour off the excess fat. Add the tomato sauce and 2 cans of hominy or whole kernel corn, drained. Mix well. Cover and cook over medium heat for about 5 minutes. Uncover and simmer for 10 to 15 minutes, or until mixture begins to thicken.

  2. Remove from heat and allow to cool slightly. Divide evenly into 6 plastic containers, and top mixture with 1⁄2 cup grated cheese, evenly divided. Add 2 packages of frozen broccoli or other cut vegetables to containers, and place in freezer.
