Recipe Ingredients for Enchilada Casserole

1 chicken breast, cooked and shredded
2 c. enchilada sauce
14 oz can tomatoes
12 corn tortillas
2 cups shredded lettuce
2 cloves garlic, crushed
1 t. cumin
1/2 t. pepper
1 c. shredded cheddar cheese

Recipe Directions for Enchilada Casserole

  1. saute chicken and tomatoes. Add lettuce and cook until wilted. Add all remaining ingredients except tortillas and cheese.

  2. Pour small amount of sauce in bottom of a 13" X 8" glass casserole dish.

  3. Begin layering tortillas, sauce, and cheese. Finish with cheese on the top.

  4. Bake 30 min. at 325 degrees.
