Easy and filling. Excellent served atop rice.

Recipe Ingredients for Enchilada Casserole

1 lb ground beef
10 1/2 oz (1 can) condensed cream of mushroom soup
10 1/2 oz (1 can) condensed cream of chicken soup
1 cup skim milk
4 oz (1 small can) chopped green chiles
8 oz salsa or taco sauce
1/2 cup chopped onion, about 1 medium
15 corn tortillas
8 oz shredded cheddar cheese

Recipe Directions for Enchilada Casserole

  1. Brown meat and onions in large pan.

  2. Add soups, milk, chiles, and salsa, mixing well. Allow to simmer for a few minutes.

  3. Cut tortillas into quarters.

  4. Cover bottom of 9X13 casserole dish with meat sauce. Place tortilla pieces on top, then cover with cheese.

  5. Continue alternating layers until all ingredients are used up.

  6. Bake uncovered at 325 for about 1 hr, or until cheese on top has browned and the edges are bubbly.
