Layered Enchilada Casserole with Beef and Black Beans

Recipe Ingredients for Enchilada Casserole

12 corn tortillas
1/3 pound pepper jack cheese
2 pounds ground beef, 85% lean
1 can beans, black
2 tomatoes
1/2 medium yellow onion
1/2 cup cilantro
1/2 cup sour cream
1/2 cup salsa verde
2 teaspoons salt
2 teaspoons pepper

Recipe Directions for Enchilada Casserole

  1. Brown ground beef with onion (chopped), drain majority of grease off or cook off. Add can of black beans (refried black beans work best), 2 tomatoes, salt and pepper.

  2. Layer in casserole dish in this order:

  3. Meat/bean mixture (small amount on bottom of dish)

  4. Corn Tortillas (single layer)

  5. Sour Cream and Salsa Verde mixture (combine these two items to make a cream salsa mixture)

  6. Meat and Bean mixture

  7. Small amount of Cheese

  8. Another tortilla layer--etc. Continue until ingredients are used up (in 9 X 13, makes about 3 layers--cut tortillas to fit pan so that they do not overlap per layer).

  9. Bake 350 degrees for 30-45 minutes until center hot.
