Lighter version of classic enchilada casserole that I grew up with.

Recipe Ingredients for enchilada casserole

1 lb. extra lean ground beef
1 small onion chopped
8 corn tortillas
1 cup reduced fat sour cream
1/2 cup canned skim milk
14 1/2 oz. diced tomatoes
2 cups canned black beans
8 oz. baby spinach leaves
1 tsp. oregano
1 tsp. garlic salt
1 tsp. pepper
1 cup reduced fat cheddar cheese, divided

Recipe Directions for enchilada casserole

  1. Brown ground beef and onion together, drain.

  2. Add sour cream, tomatoes, skim milk, black beans, oregano, salt, and pepper.

  3. Layer tortillas, ground beef mixture, spinach leaves, and cheese.

  4. Bake at 375 degrees for 30 minutes.
