Recipe Ingredients for Enchilada casserole

12 corn tortillas
4 ounces fat free shredded cheese
3 poblano peppers
2 jalapeņo peppers
1 small onion
12 oz. diced tomatoes
3/4 cup black beans
1 1/2 chicken breast
1 cup cilantro

Recipe Directions for Enchilada casserole

  1. sauce:

  2. roast poblanos, onion and jalapeņos on grill. Add to blender with tomatoes and cilantro. Blend.

  3. Pour a enough sauce in casserole dish to cover the bottom. Lay out 6 tortillas. spread beans and chicken over tortillas. Lay remaining tortillas over the top. Pour the rest of the sauce over the top and cover with cheese. Bake covered at 350 for 30 minutes, uncover and cook 10 more minutes.
