Enchilada Casserole Recipe

This Spanish-style lasagna uses tortillas instead of pasta for layers.

Recipe Ingredients for Enchilada Casserole

2 pounds ground turkey or beef or a mix of the two
4 oz black olives, chopped
1 medium yellow onion, chopped
8 oz green chiles, chopped
24 oz tomato sauce
8 oz mushrooms, chopped
3 tomatoes, chopped
12 oz chili beans
6 flour tortillas
24 oz cheddar cheese, shredded
10 oz sour cream

Recipe Directions for Enchilada Casserole

  1. Start by browning the meat in a large pot. Once the meat is browned, drain the fat and add the rest of the ingredients (minus the cheese and tortillas).

  2. Add seasonings to your preference, I usually add 1 or 2 tbsp garlic and chili powder, salt and pepper, and whatever else I feel like throwing in (it's hard to mess this up!).

  3. Preheat oven to 350 degrees and let meat mixture simmer for 25 minutes.

  4. Once the simmering is done, take a large baking pan and layer the meat and tortillas, starting with a layer of the meat mixture, followed by 2 tortillas layered across the top, and so forth, ending with meat mixture on the top.

  5. Top that off with the cheese and bake for about 25 minutes, or until the cheese is melted and bubbling.

  6. Let cool for at least 5 minutes because it gets hot!
