Recipe Ingredients for Enchilada Casserole

1 tablespoon Oil, canola
1 medium raw Onion Red
16 oz Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
1/4 tsp Cumin
15 oz Black Beans, Canned
15 oz Corn, Sweet, Yellow
16 oz Tomato Products
10 oz Enchilada Sauce
8 tortilla Multi Grain Tortillas
8 oz Mexican Style Four Cheese

Recipe Directions for Enchilada Casserole

  1. preheat oven to 350. heat canola oil on medium heat in skillet. add onion and cook until translucent. add ground beef and cook until browned. season the meat with cumin and red pepper to taste.

  2. mix tomato and enchilada sauce together in large bowl. drain and rinse the corn and black beans. add half to 2/3 of the tomato/enchilada sauce mix to the meat and onions. add beans and corn and bring to a boil. turn heat to low and simmer for 8-10 minutes.

  3. lightly grease a 9x13 casserole pan. place tortillas on the bottom and sides of the pan. add the meat mixture and sprinkle half of the cheese on top. place tortillas over the meat mixture. add the rest of the sauce and spread over the top. sprinkle with the rest of the cheese. bake for 45-50 minutes.
