Black bean, sweet potato and kale layered enchilidas

Recipe Ingredients for Enchilada Casorole

16 oz Black Beans, Organic
1 1/2 lb sweet potatoes
4 cups steamed kale
12 corn tortilla
1 cup shredded mozzarella
16 oz diced tomatoes
3 oz cilantro
1/2 c red pepper
1 tsp cumin
1 onion
2 cloves garlic
1 tbl olive oil

Recipe Directions for Enchilada Casorole

  1. Enchilada sauce

  2. Saute onions, peppers and garlic in olive oil

  3. When soft add cilantro and cumin

  4. Saute 2 minutes more

  5. Add tomatoes and cook on medium heat for 10- minutes

  6. Steam kale

  7. Parboil sweet potatoes in 1/2 inch cubes

  8. Casserole 9 x 13

  9. place half of the sauce in bottom of pan

  10. cover with 6 tortillas

  11. in layers add beans, kale, and sweet potatoes

  12. top with remaining tortillas, the rest of the sauce and cheese

  13. bake at 350 until bubbling and cheese is browned
