1 Potato medium (2-1/4" to 3-1/4" dia) Potato, Flesh And Skin
2 serving Cooking Spray All Varieties
0.5 medium White Onion
100 grams Salsa
4 clove Garlic

Recipe Directions for enchilada/burrito stuffing

  1. boil chicken w/seasoning of your choice no or low sodium/shred and add to potato onion mix

  2. dice potato and slice onion and stir fry low in skillet sprayed with Pam cooking oil add salsa and simmer 10 minutes
