Left over chicken enchilada mix made into a lasagna type bake.

Recipe Ingredients for Enchilada bake

1 1/2 cups chopped cooked chicken breast
1/2 cup canned black beans, drained and rinsed
1/4 cup frozen corn
1/2 tablespoon lime juice
1/4 teaspoon ground cumin
1/2 teaspoon chili powder
2 cups Low Fat, Cheddar Or Colby Cheese
3 serving No name Original Pasta Sauce
4 serving Casa Mendosa Whole Wheat Tortillas

Recipe Directions for Enchilada bake

Layer tortilla, enchilada mix, sauce, cheese and repeat. When enchilada mix is done, add another tortilla, sauce and cheese.
