Recipe Ingredients for enchilada bake

12 tortillas
2 green peppers, diced
1 red pepper, diced
1 onion, diced
10 oz ground turkey
14 oz crushed tomatoes
14 oz tomato sauce
1 cup pinto beans
1 cup cheese, shredded
1 tbsp cocoa
1 tsp cayenne
1 jalapeno pepper, diced
1 tbsp cumin
2 cloves garlic
1 tsp oregano

Recipe Directions for enchilada bake

  1. In a saucepan, brown ground turkey. Drain of excess fat and set aside.

  2. In the saucepan, saute the garlic in the olive oil until fragrant, but not brown. add the tomato sauce and heat through. add the cocoa, cumin, and oregano. when heated through, add the turkey back into the sauce.

  3. In a bowl, toss together the onions, green pepper, red pepper, and jalapeno.

  4. Cover the bottom of a casserole dish with 1/2 of the crushed tomato. Lay 3 or 4 tortillas to form one layer, tearing them into pieces to fit if necessary. cover tortilla layer with beans, then sprinkle a layer of the diced vegetable mixture. Cover with the sauce mixture, then layer 6 or 7 more tortillas to form a thicker middle layer. Again, cover the tortilla layer with beans, then vegetables, then sauce mixture. cover once more with 3 or 4 tortillas, then cover with 2nd 1/2 of the crushed tomato. sprinkle queso fresco over the top, cover with foil and bake for 40 minutes, taking the foil off in the last 5. serve with shredded lettuce, fresh chopped tomato and/or fresh chopped cilantro.
