A Quinoa and black bean recipe that I added things to and switched around othes.

Recipe Ingredients for Em's Quinoa Chicken & Black Beans

1 serving chicken tenderloins (daily chef)
0.5 medium (2-1/2" dia) Onions
2 medium (4-1/8" long) Onions, Spring Or Scallions
3 clove Garlic
1 medium Carrots
5 slice Squash, Summer, Zucchini, Includes Skin
0.5 medium raw Bell Pepper Green
1 pepper Pepper, Serrano
0.75 cup Quinoa
1.5 cup Natural Goodness Chicken Broth
1 serving Ground Cumin
0.25 tsp Pepper, Red Or Cayenne
0.27 g Original Cooking Spray
2 serving naturals whole kernel sweet corn
1.5 cup Black Beans

Recipe Directions for Em's Quinoa Chicken & Black Beans

  1. Brown chicken in sauce pan sprayed with Pam.

  2. Add veggies and brown.

  3. Mix quinoa into saucepan and cover with broth.

  4. Season with cumin and pepper.

  5. Bring mixture to a boil, reduce heat and simmer 20 minutes.

  6. Stir corn and beans into mixture. Simmer 5 more minutes.

  7. Top with cilantro if desired.
