2 T extra virgin olive oil
149 g. carrot, chopped
198 g. zucchini, chopped
108 g. yellow bell pepper, chopped
230 g. red bell pepper, chopped
74 g. broccoli, chopped
177 g. cabbage, chopped
2 T fresh thyme, chopped

1 1/2 T tomato paste
1 T Adobe pepper, chopped
84 g. baby spinach
19 1/2 oz sweet italian turkey sausage, cases removed

Recipe Directions for Empty the Fridge Turkey Sausage Vegetable Soup

Heat a large soup pot over medium heat, then add the olive oil. As you chop the vegetables, add them to the pot. Add thyme, adobe pepper, tomato paste and bay leaves. Stir occasionally. When the vegetables start to soften, add the italian sausage in bite sized pieces. A few minutes later, add the spinach. After the spinach begins to wilt, add the chicken broth. Bring to a boil, then lower to simmer for about 15 minutes.
