Delicious light salad that will satisfy your tastebuds to no end. Sweet with mango and a little tangy with the lime juice and onion. Great on the side of any one of my empress meals, especially the Salmon & Broccoli egg white frittata

Recipe Ingredients for Empress mango salad

1/4 c spinach
1/4 c lettuce
1 tomatoe
1/2 mango
1 tbsp lime juice
1/2 tbsp olive oil
1 tbsp onion
1/4 avocado

Recipe Directions for Empress mango salad

  1. Chop lettuce, spinach, avocado, onion and mango.

  2. Take 1/4 of the mango and blend it with 1/2 tbsp of olive oil and 1/4 cup of water

  3. Take the remaining 1/4 of chopped mango and mix it with lettuce, spinach, avocado, onion, and mango dressing.
