Traditional mexican pastries, filled with jelly

Recipe Ingredients for Empanadas

1 pound of flour
1 cup of vegetable shortening
6 oz coke
18 tsp of raspberry preserves
6 tsp of chopped nuts

Recipe Directions for Empanadas

  1. Mix flour with cut up shortening and coke using a fork. Manipulate as little as possible.

  2. Extend to 1/8 of an inch think. Cut with large round cookie cutter, fill with 1tsp of jelly and 1/3 tsp of nuts each. Fold over and seal the edges.

  3. Bake at 410F for 20 minutes or until golden brown on top. Let cool for 5 minutes, cover with sugar.
