Recipe Ingredients for Emma's Chickpea Curry Casserole

2 Can Chick Peas
2 cup, cubes Turnips
2 cup slices Carrots
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Peppers, Sweet, Green
2 tbsp Olive Oil
0.5 cup dry Natural Brown Rice
2 tbsp Curry Powder
1/4 cup chopped Scallions

Recipe Directions for Emma's Chickpea Curry Casserole

Put Rice on to cook. Boil Carrots and Turnip in vegetable stock and 1 tblsp curry powder. Fry Chickpeas in oil with peppers and scallions and 1 tblsp curry powder. Mash veg into a sauce consistency, including the cooking water or stock, when it is cooked and soft. Add in the chickpeas, etc. Serve with Rice.
