Recipe Ingredients for Emma Jane's Vegetarian Irish Stew

2 1/2 pounds new potatoes, 4oz peas, 2 carrotts, 4oz green beans, 8oz broccolli, 2oz whole green lentils, 2 pints vegetable stock, 1 tblsp mi

Recipe Directions for Emma Jane's Vegetarian Irish Stew

Bring the vegetable stock to the boil. Wash and chop the potatoes and carrotts into 1 inch cubish pieces (skins on for fibre). Add potatoes to the stock with the herbs, lentils and some seasonings. Bring back to the boil and simmer for 15 to 20 mins, until the vegetables are just tender. Fry off the quorn pieces in the oil until golden brown. Add the peas, chopped green beans, chopped broccolli and cooked quorn to the stew and simmer for another 5-10 minutes until just cooked with some bite. Season some more if desired.
