Recipe Ingredients for Emma Jane's Chickpea With Basmatti Rice

1 tblsp olive oil
500 g canned chickpeas
2 tblsp curry powder
3 medium carrots
2 spring onions
5 small potatoes
500 g celery
1 large tomato
1 tblsp natural yoghurt
50 g basmati rice

Recipe Directions for Emma Jane's Chickpea With Basmatti Rice

Cook the rice as directed. Fry the chickpeas and scallions in the oil for a few minutes. Add 1 pint of vegetable stock. Add chopped potatoes, carrots, celery and curry powder. Bring to the boil and simmer for 15 minutes. Add the chopped tomatoes and simmer for 5 more minutes. Turn off the head and stir in 1 tblsp natural yoghurt.
