Veggie pizza with whole wheat crust and part skim mozzarella cheese. Yields two 12 inch round pizzas. The nutrition facts are for two slices.

Recipe Ingredients for Emily's Pizza Supreme

1 cup all purpose flour
1 1/2 cups whole wheat flour
1 cup warm water
2 tablespoons extra virgin olive oil
1 teaspoon salt
1 teaspoon white sugar
1/4 oz. dry active yeast
8 ounces white mushrooms, sliced
3 cups baby spinach
4 1/2 ounces grape tomatoes, halved
4 cloves garlic, diced
1/2 large sweet onion, sliced
1 cup pizza sauce
8 ounces part skim mozzarella cheese
1 red pepper flakes, thyme, salt and pepper to taste

Recipe Directions for Emily's Pizza Supreme

  1. First prepare the crusts by putting the yeast, sugar, and water into a large bowl. I use the "rapid rise" type of yeast. Allow to sit until creamy and foamy looking.

  2. Once the yeast mixture looks creamy and foamy, add the olive oil, salt, and flours to it. Mix with a wooden spoon until well blended, then cover the bowl with plastic wrap and let sit in a warm, draft free place for 10 minutes.

  3. After 10 minutes use a spatula to turn the dough out onto a well floured surface and knead for a few minutes.

  4. Split the dough in half and roll out, or shape with hands, each half into a 12 inch round. You will have 2 crusts to work with. Place crusts onto pizza pans that have been sprinkled with cornmeal, or covered in parchment paper, to keep pizza from sticking. Allow the crusts to rest for about an hour.

  5. Meanwhile, slice the onions and mushrooms and dice the garlic. Rinse the spinach, and cut the grape tomatoes in half.

  6. Saute the onions on medium heat with a little bit of water, adding more water as needed to keep onions from sticking. Cook until light brown in color, then remove from the pan, season with salt and pepper, and set aside.

  7. Add garlic to pan, along with about 2 tbs. of water, and saute on low heat until softened. Once softened, add the sliced mushrooms as well as thyme, salt, and hot pepper flakes to taste. When cooked through, remove from pan and set aside .

  8. Saute rinsed baby spinach on medium heat until just wilted. Remove from pan and set aside.

  9. When there is about ten minutes left to your dough resting, pre-heat the oven to 450 degrees.

  10. Once dough is done resting, add sauce, cheese and all veggies but spinach, splitting ingredients between the two crusts. Make sure to place the grape tomatoes cut side up, so the juice doesn't leak all over and make your pizza watery.

  11. I cook one pizza at a time, but you could probably cook them both at the same time. Cook for about 13 minutes, or until cheese is melted and just starting to brown. At this point, remove the pizza from the oven and add spinach, then return to oven for 2 more minutes.

  12. Remove from oven and allow to cool for a few minutes before cutting and serving.
