Recipe Ingredients for Emeril's Warm Spinach Corn Salad

1 tablespoon olive oil
1 cup corn kernels
1/3 cup onion, coursely chopped
1 clove garlic, minced
1 teaspoon salt
1 teaspoon black pepper
1 pound fresh spinach
1/4 cup red bell pepper, chopped
1/4 cup chicken broth

Recipe Directions for Emeril's Warm Spinach Corn Salad

  1. Heat oil over high heat. When oil is hot, add corn, onions, salt, garlic and pepper, and saute, shaking skillet occasionally, for 3 minutes.

  2. Add spinach, peppers, and broth and cook to wilt the spinach, for about 2 minutes. Remove from heat and serve warm.
