Recipe Ingredients for Emeril's roasted red pepper sauce

2 tablespoons olive oil
3 large red bell peppers, roasted and cut up coarsely
1/4 cup white onion, chopped
2 teaspoons garlic, minced
1 teaspoon fresh basil, chopped
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 teaspoon black pepper
2 cups chicken broth
2 tablespoons heavy cream

Recipe Directions for Emeril's roasted red pepper sauce

  1. Combine oil, peppers, onions, garlic, basil, salt, cayenne, and black pepper in a medium saucepan over high heat and cook for 3 minutes.

  2. Stir in broth and the cream and bring to a full boil.

  3. Reduce heat and simmer, stirring occasionally for about 8 minutes.

  4. Remove from heat and puree in food processor or blender for about 2 minutes.

  5. Serve immediately or store in air tight container.

  6. *Recipe does not indicate if it can be frozen, but I may try this.
