Recipe Ingredients for Emeril's Potatoe Leek Soup

2 tablespoons butter
2 cups diced onion
6 sliced leeks
1 salt
1 black pepper
3 tablespoons butter
3 tablespoons flour
1 quart chicken stock
1 quart beef stock
4 cups diced potatoes

Recipe Directions for Emeril's Potatoe Leek Soup

Heat butter in skillet over medium heat, add onion and leeks, saute for 2 minutes. Season with salt and pepper. Add butter, add flour when melted to make a roux. Whisk in chicken and beef stock. Add potatoes and bring to simmer. Cook until potatoes are tender.
