Cinnamon Muffins with Apple Chunks

Recipe Ingredients for Elzabeth's Apple Cinnamon (almost invisible) muffins

2 cups Gold Medal whole wheat flour
1/2 tsp salt
3 tsp baking powder
3 tbs sugar
2 tbs Splenda
2 tsp Cinnamon
4 tbs I Can't Believe It's Not Butter
1 cup non fat milk
1 egg
2 tsp vanilla
1 cup apple, chopped

Recipe Directions for Elzabeth's Apple Cinnamon (almost invisible) muffins

  1. Preheat oven to 400 degrees.

  2. Line muffin tins with foil liners, or butter the bottoms only of muffin cups.

  3. Combine dry ingredients

  4. Cut in ICBINB as you would for biscuits

  5. Set aside.

  6. Beat egg and vanilla into milk.

  7. Add liquid ingredients to dry ingredients all t once. Batter will be lumpy.

  8. Quickly mix in chopped apple.

  9. Spoon into prepared muffin cups and immediately place in oven.

  10. Bake 20-25 minutes or until browned. Note: As there is less sugar in these muffins, you will not get the rich brown you might be looking for. If toothpick comes out clean they are done.

  11. If you are real cinnamon addict, you can sprinkle muffins when just out of the oven with a dusting of cinnamon and powered sugar.
