It's a pretty yummy change up if your palate is tired of the same-old vegetable soup. Don't be put off by how bad it LOOKS, the salsa makes it a VERY BRIGHT red. Serving is ~1 cup.

Recipe Ingredients for Elly's Zesty Vegetable Soup

2 cups water
2 cups vegetable broth
1 1/4 cups tomato soup
2 cups frozen mixed vegetables
1 1/2 cup tomatoes, diced
1 cup salsa
2 cups cabbage, shredded very fine
2/3 cup onion, minced
3 tbsp garlic, minced
1/4 cup brown rice (dry)
1/4 cup lentils (dry)

Recipe Directions for Elly's Zesty Vegetable Soup

  1. Cook brown rice and lentils.

  2. Bring water and vegetable broth to a boil.

  3. Add all other ingredients, including cooked brown rice and lentils, except tomato soup.

  4. Cover and reduce heat. Simmer for 20 minutes or until frozen vegetables and cabbage are tender.

  5. Add tomato soup and mix well.

  6. Serve hot.
