A fairly standard vegetable omelet.

Recipe Ingredients for Elly's Veggie Omelet

2 large eggs
1/2 tbsp Smart balance 37% Buttery Spread
1 tbsp mushrooms, chopped
1 tbsp onion, chopped
1 tbsp green onion, chopped
1/8 tsp pepper, freshly cracked
1 tbsp fat-free cheddar cheese, shredded

Recipe Directions for Elly's Veggie Omelet

  1. Crack eggs into a small bowl and beat lightly. Set aside.

  2. Saute onion, green onion, and mushrooms in a small nonstick skillet until onion is transparent. Set aside.

  3. Melt spread in skillet over medium-low heat. It should bubble but not pop.

  4. Pour egg mixture into skillet. Lift edges of omelet and let the uncooked portion run underneath. Periodically, give the skillet a good hard shake to break the omelet loose from the bottom.

  5. When the top of the omelet is almost set (should be a Jell-o type consistency) then flip the omelet in the skillet (preferably over the trash or sink if you are a beginner). For beginners, this is done by actually throwing the omelet in the air and catching it face side down. You will quickly draw a 'D' in the air with your hand while holding the skillet handle, with the flat side facing the floor. Be prepared to make a big mess and ruin some eggs learning.

  6. Add the cooked vegetable filling to the half of the round that faces AWAY from the handle, and sprinkle with pepper and cheese.

  7. Slip omelet onto plate (full side first) and fold the unfilled side over the filled side.

  8. Pat dry with paper towels to remove as much of the oil from the outside as possible. Season to taste with pepper and salt and eat while hot.
