Serving is about 3/4 cup. This soup comes out thick and stew-ish and sticks with you pretty well.

Recipe Ingredients for Elly's Special Soup

2 1/2 cups vegetable broth
1 cup water
1/2 cup dry lentils
1 cup uncooked brown rice
1/2 tsp ground sage
1 tsp italian seasoning
1/2 tsp rosemary
1 tbsp diced garlic
1 1/4 cup tomato soup
12 oz diced tomatoes, undrained
1 small onion, minced
2/3 cup carrots, chopped

Recipe Directions for Elly's Special Soup

  1. Combine broth and 1 cup water and bring to a boil.

  2. Add lentils, rice, and spices.

  3. Cover and reduce heat. Simmer for 35 minutes, stirring occasionally.

  4. Add tomatoes, onion, and tomato soup. Re-cover and simmer for 20 minutes or until carrots are tender, stirring frequently.
