So named because you just dump a lot of cans into one pot and cook. Serving is about 2/3 of a cup. This recipe freezes well if you are not serving an army.

Recipe Ingredients for Elly's Dump Chili

1/2 cup brown rice, dry
1 1/2 cups water
1 1/2 cups (1 can) boiled kidney beans
1 1/2 cups (1 can) boiled black beans
24 oz (1 large can)tomatoes, diced
1 1/2 cups (1 can) corn
1 tbsp chili powder
2/3 cup onion, diced (1 small)
1 1/2 cups salsa
1 1/2 cups water

Recipe Directions for Elly's Dump Chili

  1. Prepare brown rice.

  2. Add remaining ingredients and cook for 20 minutes over medium heat or until well heated.
