Warm corn tortillas make a great start for a taco. It's quick and easy to make as well.

Recipe Ingredients for Ellen's Tacos

6 corn tortillas
14 oz. refried beans
1 c. cheddar cheese, grated
1 c. tomato, diced
1 c. red onion, chopped
1/2 c. black olives
1 c. salsa
1/2 c. sour cream

Recipe Directions for Ellen's Tacos

  1. Wrap the tortillas in tin foil, and heat in a 350 oven for 20 minutes, until nice and warm.

  2. Heat the refried beans.

  3. Chop the tomato and onion, and place in small serving bowls.

  4. Put the cheese, chopped olives, salsa, and sour cream in their own serving bowls. (Optional: you might also want a bowl of chopped fresh cilantro, and maybe tobasco sauce.)

  5. Remove the tortillas from the oven, and place 2 dollops of refried beans atop each tortilla. Then fill the tortilla with the remaining ingredients, saving the sour cream last.

  6. Serve with brown rice turned into a spanish rice with onions, green chilis, ground cumin, cilantro, tobasco, and tomato sauce. And don't forget a green salad with a low fat, low cal. dressing.
