A no-butter (but olive oil) version of a Jewish favorite. This is a wonderful grain although I've been told by some that it's an acquired taste. That's probably because I don't add butter, which would no doubt boost the flavor, but personally, I'd rather skip the calories and get the benefit of this super grain.

Recipe Ingredients for Ellen's Shicksa Kasha Varnishka

1 c. Buckwheat Groats, Roasted, Dry (kasha)
1 egg
2 tbsp. olive oil
1 medium onion, diced
12 oz. sliced mushroom
2 c. water
1 tbsp. chicken bouillon
2 c. Noodles, egg (cooked)

Recipe Directions for Ellen's Shicksa Kasha Varnishka

  1. Put the kasha in a bowl and add the egg. Stir until each kernel is coated. Set aside.

  2. Sautee onion and mushrooms in a 2-3 quart pot until they're tender (about 15 minutes). Add the water and bouillon and simmer, uncovered, for about 20-25 minutes, until the water is fully absorbed.

  3. While kasha is simmering, cook the noodles so you have about 2 cups when you're finished.

  4. When kasha and noodles are both cooked, mix the noodles into the kasha and stir.

  5. Add salt and pepper to taste.
