This dish has a Southwest zing, with a little under 300 calories per serving. It's good hot or cold.

Recipe Ingredients for Ellen's Rice and Beans

1 tbsp. olive oil
1 c. brown rice
2 c. water
14 oz. diced tomatoes
14 oz. black beans
1 small onion, diced
2 cloves garlic, minced
1 tbsp. oregano
1 tbsp. cumin
1/4 c. cilantro, chopped
1/8 tsp. Tabasco sauce

Recipe Directions for Ellen's Rice and Beans

  1. Sautee the brown rice, onions, and garlic in olive oil for about a minute over medium heat (stir to coat).

  2. Add water to the rice and cover the pot. Let cook over medium heat until steam begins to escape the lid of the pot. Remove from heat for 5 minutes. Then return to low heat and let simmer for 25 minutes. Leave the cover on at all times.

  3. Once the rice is cooked, add the tomatoes and beans, then the seasoning. (Adjust seasoning to your own taste... you might want to add salt and pepper, although the Tabasco often does the trick.)
