Recipe Ingredients for Ellen's Quinoa & Peppers salad

1 tbsp. olive oil
1 c. quinoa, rinsed
2 c. chicken broth, low sodium, low fat
1 small (2") red bell pepper, diced
1 small (2") orange bell pepper, diced
1 small (2") yellow bell pepper, diced
1/3 c. red onion, diced
1 roma tomato, diced
1/2 cucumber, peeled and sliced
1 stalk celery, diced
1/4 c. chopped cilantro (depends on your taste)
1 tbsp. toasted sesame seed oil
1 salt and pepper to taste

Recipe Directions for Ellen's Quinoa & Peppers salad

  1. Combine the chicken broth and quinoa in a medium size sauce pan and simmer until the quinoa has absorbed all the broth (about 15 minutes).

  2. Meanwhile, dice the vegetables and chop the cilantro.

  3. When the quinoa is done, add the veggies, cilantro and the oils. Salt and pepper to taste. Stir. Eat. Yum.
