Recipe Ingredients for Ellen's Mushroom Casserole (296 cal./serving)

4 tbsp. olive oil
3 c. Bread, French, cubed
3 lbs. mushrooms, sliced
3 c. green onion, chopped
3 c. celery, chopped
3 c. green pepper, chopped
4 tsp. parsley
8 tbsp. mayonnaise
1 salt and pepper to taste
10 eggs, beaten
4 c. milk, 2%
1/4 c. parmesan cheese

Recipe Directions for Ellen's Mushroom Casserole (296 cal./serving)

  1. Sautee mushrooms in 2 tbsp. olive oil

  2. Sautee celery, peppers, and onions in 2 tbsp. olive oil

  3. Combine sauteed vegetables

  4. Salt and pepper to taste

  5. Remove from heat and stir in the mayonnaise

  6. Remove crust from the French bread and cut the bread into cubes.

  7. Place have the cubes in the bottom of a large casserole dish.

  8. Cover with the vegetables.

  9. Place remaining bread as top layer.

  10. Combine milk and eggs, then pour over the mixture in the casserole.

  11. Cover and refrigerate overnight.

  12. Bake at 350F for 45 minutes, covered.

  13. Add parmesan cheese and bake 10-15 minutes, uncovered.
