Simple quick meal, can be made with canned chicken. Choose the salsa you want: Mild to Hot.

Recipe Ingredients for Ellen's Mexican Chicken and Rice

1 lb chicken, cubed
1 small onion
1 small green pepper
1 cup salsa
1 1/2 cups minute rice
1/2 cup cheddar cheese, shredded
10 1/2 ounce chicken broth, 1 can
10 ounce corn, frozen package
1 ounce olive oil

Recipe Directions for Ellen's Mexican Chicken and Rice

  1. Cook chicken, onion, pepper in oil til done.

  2. Add corn broth and salsa, bring to a boil, stir in rice, cover and remove from heat, let stand 5 minutes, fluff with fork, sprinkle with cheese, cover, let stand until cheese melts in about 2 minutes
