very tasty salad with no salad dressing (just use the juice from the Mandarin oranges).

Recipe Ingredients for Ellen's easy salad

1 head Boston Lettuce, torn into bite-sized pieces and cleaned
1/2 cucumber, peeled and sliced
2 scallions, sliced into small bits
1/8 c. pumpkin seeds
1/2 c. oranges, Mandarin with 4 tblsp. juice
2 oz. cheese, bleu, crumbled

Recipe Directions for Ellen's easy salad

Mix together all ingredients except for the Mandarin Oranges. Just before serving, add the oranges and about 1/3 can of the juice. Toss well.
