Recipe Ingredients for Ellen's Cucumber Salad (111 cal./serving)

4 c. cucumber, peeled and thinly sliced
2 tsp. salt (kosher)
1/2 c. vinegar, rice
1/2 c. water
3 tbsp. sugar
1/4 tsp. crushed red pepper
2 tbsp. red onion, minced
4 tbsp. peanuts, dry roasted and chopped

Recipe Directions for Ellen's Cucumber Salad (111 cal./serving)

  1. Put sliced cucumbers in a colander and sprinkle with salt. Toss well and then let drain for 1 hour. Rinse.

  2. Spread cucumbers on several layers of paper towels, then cover with additional paper towels and let them sit for 5 minutes, pressing down on them now and then. Turn cucumbers into a serving bowl.

  3. Meanwhile, put vinegar, water, sugar and pepper in a saucepan and let boil. Reduce to a simmer and cook for 10 minutes. Remove from heat and let cool.

  4. Stir the onion into the cooled liquid and then pour over cucumbers and toss well. Sprinkle with peanuts.
