This is best when you make your own broth (described below). My husband, who grew up with a Jewish mother, says this is the "real thing". You can add rice or noodles separately, or eat as is.

Recipe Ingredients for Ellen's Chicken Soup (124 cal./cup)

12 c. chicken broth, low sodium
3 carrots, large, sliced to bite size
3 celery stalks, large, sliced to bite size
2 onions, medium, diced
4 c. chicken, meat only, cooked, skinned, and diced
1 tbsp. sage
2 tsp. dill
1 salt and pepper to taste

Recipe Directions for Ellen's Chicken Soup (124 cal./cup)

  1. To make broth:

  2. Boil a whole chicken in a large pot, with 2 carrots, chopped large; 2 stalks celery, chopped large; and 2 medium onion, chopped in large chunks. Cook over medium-low until the chicken is done and the meat is falling off the bones.

  3. Remove chicken and veggies from the broth. Toss out the veggies and remove the chicken from the bones. Bake the carcass/bones at a 450F over for about 30 minutes, until they turn dark brown or black. Using a colander, dip the cooked bones into the broth and let boil for 30 minutes more. This should give you a nice broth for the soup. If you feel it needs more flavor still, try adding a little bit of chicken bouillon (I use low sodium "Better than Bouillon).

  4. To your now hearty broth, add the veggies, chicken and seasonings and cook on low for an hour, or until veggies are done.
